Healthy Recipes For Dinner: Veggie Bake
In healthy recipes for dinner, I’m going to share my favourite dinner recipe and I’ll also show you how to cook it. The preparation time is only 20 minutes, even though I said it’s longer in the video. We have sped up the boring bits, like grating carrots or chopping broccoli, so you can enjoy the best bits: me cooking this yummy healthy recipe, my Herb Veggie Bake. Best of all you get to see it to come out of the oven.
Now, I’m not what I call a natural cook – I can’t just go to the refrigerator and produce a gourmet meal like some people can! However, by following this simple healthy recipe for dinner it makes me look like I can cook like a real chef
- 2 large carrots grated
- 5 eggs separated
- ½ head of broccoli, chopped
- ¼ head cauliflower, chopped
- ½ cup organic cheese, grated
- ½ cup flaxseed meal
- ½ bunch fresh dill
- ¼ cup olive oil
- 3 tbs fresh parsley & chives
- ½ tsp natural baking power
- Combine all ingredients except eggs into bowl. Mix well.
- Stir in egg yolks.
- Beat egg whites until stiff and then fold lightly into vegetable mix.
- Spoon ingredients into well oil 20 cm ring tin, then smooth over surface.
- Bake in moderate oven (170 C/340 F) for 50-55 minutes or until golden brown.
I wanted to get all of this on video, not to show you how I fumble around the kitchen, (see the healthy recipes for dinner bloopers for that); I wanted to demonstrate that even “Non-Cooks” like me can cook a few good healthy recipes for dinner and have some fun doing it.
Herb Veggie Bake is a great recipe because it has 3 vegetables, some eggs, herbs, flaxseed meal and a little bit of cheese, so the whole family will like it. Also, once you have cooked it and let it cool, it’s great to put the leftovers in the freeze to be eaten at a later date. I’ll often cook up this recipe before an overseas trip, so the day I get home I can have yummy Veggie Bake and pesto chicken, without the fuss of getting groceries while jet lagged.
Herb Veggie Bake is a great healthy recipe to bake on a Sunday night and to have thoughout the week, as a side with meat or fish, or to take for lunch with a salad. Hope you enjoy the video, it’s meant to fun, informative and easy to cook along to!
